“Japanese and Western cultures,” “Food and drink,” “Past and present.”

LOCATION

NATURAL
HOT SPRING (ONSEN)

Our large bath was built in a style reminiscent of the Showa era, creating a nostalgic atmosphere.
Travel back in time to sento public bathhouses of the Showa era, when the sound of geta wooden clogs echoed through the streets!
Our onsen water is of the highest quality and is drawn directly from the source at Matsue Shinjiko Onsen.

Enjoy smoother skin with the “Mirable” shower

Our large bath features the “Mirable” ultra-fine mist shower heads. These shower heads produce micron-sized bubbles that remove dirt and grime deep within the skin. They are also gentler than standard heads, making them popular with customers with sensitive skin. Enjoy the skin-beautifying effects of the hot spring and the skin-smoothing effects of our shower heads.

CUISINE

The concept behind our cuisine is “the pairing of food and drink.” Our dishes are made with seasonal, quality ingredients found locally in Shimane such as Matsuba crab, nodoguro, and Japanese seabass.

Enjoy a meal paired with local Shimane sake and carefully selected by a sake sommelier.

Shimane Wagyu beef is considered amongst the highest-quality beef in Japan and has won several prestigious awards.

It has won the Prime Minister’s Award twice at the prestigious Japanese Beef Olympics held every five years. The meat has a nice balance of flavor, fat, and texture typical of high-quality Wagyu beef. One bite of Shimane Wagyu beef will fill your mouth with its tender texture and rich umami flavor delivering a luxurious dining experience.

The king of crabs, Matsuba Crab

Matsuba crab is called the king of crabs because of its sweet springy meat.
The Sanin area provides a suitable environment for Matsuba crabs to grow plump and full. During the winter season, enjoy the sweet crab meat sashimi style, boiled, or grilled.

Nodoguro or blackthroat seaperch is a premium-grade fish found in the beautiful sea of Japan.

Nodoguro caught in Shimane Prefecture is well-known nationwide for its deep flavor and mild fat content. About 40% of the fish caught in Japan are from Shimane Prefecture. Once you try the large nodoguro from here, you’ll never be able to eat the normal “big” nodoguro again.

Japanese sea bass live in a unique environment and are a specialty of Matsue, the City of Water.

We prepare our Japanese sea bass using the hosho-yaki style, which consists of the fish wrapped in wet Japanese paper when roasted. The story has it that back in the day local fishermen used to cook sea bass using the ashes of a bonfire. But when the 7th lord of the Matsue Domain, Matsudaira Harusato, requested the dish, the cook didn’t want to serve a fish covered in ashes. So, he decided to wrap the fish in Japanese paper before roasting it. This is said to be the origin of this local delicacy. Roasting Japanese sea bass in Japanese paper enhances the aroma and flavor of the fish.
